Ingredients:

  • 2 cups cooked chicken breast, shredded
  • 1/2 cup plain Greek yogurt (or mayonnaise for a creamier texture)
  • 1 tablespoon Dijon mustard
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, chopped
  • 1/4 cup grapes or apple, chopped (optional for sweetness)
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 tablespoon lemon juice (optional)

Instructions:

  1. Prepare the Chicken: Shred the cooked chicken breast using a fork or your hands.

  2. Make the Dressing: In a bowl, mix together the Greek yogurt, Dijon mustard, salt, pepper, and lemon juice (if using).

  3. Combine Ingredients: Add the shredded chicken, red onion, celery, and chopped fruit (if using) into the bowl. Stir until well combined.

  4. Garnish & Serve: Top with fresh parsley, and give it one last stir. Serve the chicken salad on its own, in a sandwich, or on a bed of lettuce.
