Easy & Hearty Breakfast Burrito Recipe
Start your day with a delicious and filling breakfast burrito! Packed with protein, veggies, and cheese, this grab-and-go breakfast is perfect for busy mornings. Plus, you can make them ahead and freeze for later!
Ingredients:
4 large flour tortillas
6 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
1/2 cup cooked breakfast sausage or bacon (optional)
1/2 cup diced bell peppers
1/4 cup diced onions
1/2 cup cooked hash browns or diced potatoes
1/4 cup salsa (optional)
1/4 cup sour cream (optional)
1 tablespoon butter or oil for cooking
Instructions:
Cook the Veggies & Meat: Heat a pan over medium heat and sauté the bell peppers and onions until softened. If using sausage or bacon, cook until crispy, then set aside.
Scramble the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Pour into the pan and cook, stirring occasionally, until scrambled and fully cooked.
Assemble the Burritos: Lay a tortilla flat and layer scrambled eggs, cooked veggies, meat, hash browns, cheese, and a spoonful of salsa or sour cream.
Roll the Burrito: Fold in the sides, then roll it up tightly from the bottom. Place seam-side down.
Heat & Serve: If desired, lightly toast the burrito on a skillet for a crispy exterior. Serve warm and enjoy!
Make-Ahead & Freezer Instructions:
Wrap each burrito tightly in foil or plastic wrap.
Store in the fridge for up to 3 days or in the freezer for up to 2 months.
