Mediterranean Quinoa Salad Recipe

Ingredients:

  • 1 cup cooked quinoa (about 1/2 cup uncooked)
  • 1/2 cup cucumber, diced

  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled

Instructions:

  1. Cook the Quinoa: In a pot, cook the quinoa according to package instructions. Once cooked, let it cool down for a few minutes.

  2. Prepare the Veggies: While the quinoa is cooling, dice the cucumber, chop the red onion, slice the olives, and halve the tomatoes.

  3. Mix the Salad: In a large bowl, combine the cooled quinoa, cucumber, red onion, olives, tomatoes, and feta cheese.

  4. Dress the Salad: Drizzle with olive oil, lemon juice, and sprinkle with oregano, salt, and pepper. Toss to combine.
